UCO Bakery is a Mallorca-based artisan bakery dedicated to “real bread”: 100% sourdough, made naturally with long fermentation and carefully sourced ingredients. The brand was founded in 2018 by Cate and Gus, inspired by a desire for healthier, more digestible bread and a deeper connection to local island producers.
What makes UCO stand out in the conscious food scene is its clear commitment to simplicity and transparency. Their bread is made without commercial yeast or additives, relying on natural fermentation (often 30+ hours) to develop flavor, structure, and improved digestibility. UCO highlights a minimal-ingredient approach—flour, water, and salt—while choosing stone-ground and organic wholegrain flours grown in Mallorca, plus mineral water from the Serra de Tramuntana and sea salt from Es Trenc.
How to enjoy UCO
You can order through their online shop with free in-store pickup, or choose delivery with shipping to mainland Spain and the Balearic Islands in 48 hours. In addition to their core sourdough breads, UCO offers naturally crafted sweet and savory bakery items (including seasonal specials and celebratory bakes), plus gift vouchers for products and experiences.
Workshops: learn sourdough the UCO way
UCO also runs an in-person natural fermentation bread masterclass priced at 120€. The session is designed for beginners and improvers alike, and covers the full process—from creating a starter to mixing, shaping, scoring, and baking. Workshops typically run on Saturdays (09:30–14:30) in small groups (maximum 8 participants), and participants take home their own loaf to bake plus a starter to continue at home. Gift vouchers for the workshop are valid for one year.
With multiple locations across Palma de Mallorca and Portals Nous (Calvià)—including a new Obrador space inaugurated in 2026—UCO Bakery is an easy, conscious choice for anyone seeking high-quality sourdough and community-rooted craftsmanship on the island.
