Mel Caramel is a Mallorca-based producer of certified organic honey, harvested and packaged on the island with a strong focus on respectful apiculture and small, sustainable apiaries. The brand’s approach is intentionally low-impact: hives are placed in natural areas far from potential contamination from industrial agriculture, and harvests remain limited due to the Mediterranean climate’s variability.

The result is a collection of highly characterful, place-specific honeys that express Mallorca’s biodiversity—from the Serra de Tramuntana mountains to the plains of the Pla de Mallorca. Each honey is linked to a specific estate and seasonal conditions, with tasting notes that highlight aroma, colour, flavour and texture. For example, the “Can Knudsen” honey is described as very dark amber (almost black), intensely aromatic, with floral and malt notes, a sweet taste with slight saltiness, and very slow crystallisation.
